SINGKAMAS, also known as jicama in English, is a crunchy and sweet root vegetable popular in our country. Its versatility and unique flavor make it a favorite for salads, stir-fries, and snacks.
Lumpiang Singkamas (Spring Rolls with Jicama):
Ingredients: Ground pork or beef, singkamas (julienned), bell pepper, carrots, garlic, onion, black pepper, lumpia wrappers, cooking oil, vinegar, fish sauce, and soy sauce.
Method: Sauté garlic and onions, then add ground meat and cook until browned. Add julienned singkamas, bell pepper, and carrots, and cook until tender—season with vinegar, fish sauce, and soy sauce. Let the mixture cool, then wrap in lumpia wrappers and fry until golden brown.
Storage Tips:
- Refrigeration: Store fresh singkamas in the refrigerator if you plan to use it within a few days. Keep it in an airtight container or wrap it tightly in plastic wrap.
- Freezing: For longer storage, peel and slice the singkamas, then freeze. Place it in a freezer-safe bag, removing as much air as possible before sealing. It can be stored in the freezer for up to three months.
