LOCAL MAIS commonly known as corn, is a staple crop widely grown and consumed in the Philippines. It is characterized by its large, elongated ears filled with rows of kernels that can be yellow, white, or a mix of colors. Corn is a versatile ingredient used in various culinary applications, from fresh corn on the cob to processed products like cornmeal and corn syrup.

 Corn is a good source of carbohydrates, providing energy for daily activities. It also contains essential nutrients such as fiber, vitamins B and C, magnesium, and antioxidants like lutein and zeaxanthin, which support eye health.

Culinary Uses: Local mais can be enjoyed in many ways. Fresh corn can be boiled, grilled, or roasted and served on the cob. The kernels can be used in salads, soups, stews, and casseroles. Cornmeal is used to make cornbread, tortillas, and other baked goods. Corn syrup is a common sweetener in many processed foods.

 

Storage: Fresh corn should be stored in the refrigerator and used within a few days for the best quality. Corn kernels can be frozen for longer storage. Dried corn products like cornmeal and popcorn should be stored in a cool, dry place.
