KALABASA is a popular tropical vegetable in our country. Its rind is vibrant orange or dark green, sometimes mottled with green spots. The flesh inside is bright orange or yellow, with a sweet and slightly nutty flavor.
When cooked, kalabasa becomes soft and tender, making it a versatile ingredient in savory and sweet dishes. It’s commonly used in Filipino recipes like Ginataang Kalabasa (squash cooked in coconut milk), soups, stews, and baked goods. Nutritionally, kalabasa is rich in vitamins A, B6, and C, as well as folate, magnesium, and fiber.
